Simple Staple: The Egg

Sunday is my designated day to solidify the following week's schedule and to create a grocery list,  which can be a little tricky for a few reasons. I try to follow a nutritious diet that avoids processed food and that includes ingredients that satiate my appetite , especially while working, running or riding. Addtitionally, my household's schedule seems to be constantly changing, thus I need  to keep items in my refrigerator that may be prepared quickly.  One staple that I always include on for my shopping list is the egg.  This affordable source of protein is only about 70 calories and has a multitude of dietary benefits including:

1) No Added Sugar. Eggs contain no sugar or carbohydrates, unlike most cereals and yogurt. 

2) Protein Power. Eggs are all natural and one of the highest quality proteins available. The high- quality protein in eggs provides the “building blocks” your body needs to grow and perform 

 3) Long Lasting Energy. Starting the day with a high-quality protein breakfast like eggs can help provide sustained mental and physical energy throughout the day (1). 

Additionally, the mild flavor of eggs lend well to a wide swath of flavorful (and even trendy) dishes that are healthy choices for breakfast, lunch, dinner, and snacks.

Just recently I started to prepare  BAKED HARD BOILED EGGS  in a muffin pan that I pair with mixed greens, top on sprouted grain toast, or just eat “as is” for a quick snack.
